State’s best beef snag

THE team at Carey Bros Meats have done it again and snagged themselves a winner at the Sausage King state finals this week.

With six categories in the Sausage King field and three in the Butcher’s Choice competition, it was a carnivore’s heaven as judges decided who would continue on to the national finals in October.
It was the third state-level award for Carey Bros Meats who took out best pork snags in 2011, and best lamb snags in 2012; but this year it was the coveted beef snag award.
A field of 25 butchers entered 245 of their favourite snags in the sizzling hot competition, featuring flavour combinations as diverse as pork orange honey, Chinese duck and tzatziki lamb sausage.
Carey Bros Meats owner Paul Carey said the beef sausage category was something he had long strived to achieve by combining only the best ingredients.
“It’s humbling to win the beef sausage category, it’s something I’ve always wanted to win,” he said.
“We’d been working on it for a while, but it’s something we do every day here in Warwick by using only the best ingredients.”
Head judge Allan Rowan was impressed with the quality of product in the area and said a Sausage King win could do big things for a business.
“I’ve seen guys go from producing 200 kilograms of sausage a year to two tonnes per year after winning the awards,” he said.
